Seriously. I made 3 dozen of these babies, and they were gone in less than 24 hours. This one's a keeper.
Applesauce Muffins (makes 1 dozen)
2 cups applesauce with cinnamon to taste
1 tsp baking powder
1/2 tsp baking soda
3 tbsp oil
2/3 cup brown sugar (not white... brown makes them moist)
1 1/2 cups flour
1. Preheat oven to 375*F. Put the muffin liners into the muffin tin.
2. Mix applesauce, baking powder, baking soda, eggs and oil, add brown sugar, then flour last. Batter should be thick but pourable.
3. Fill muffin liners a little over halfway, then throw them in the oven for about 12-15 mins. (Don't poke them with a toothpick... just lightly touch the top of one, and if it's kind of solid and springs back, they're good to go).
4. Yank 'em out, and try to let them cool on the counter. I say "try" because the first batch will mysteriously disappear before they've even had the chance.
Hint: I like to sprinkle a little cinnamon on top of mine, sometimes with a bit of brown sugar mixed in.
