Only two sleeps 'til Beltane! Like every other year, I'm craving more summery foods in contrast to the heavy, hearty foods we've enjoyed all winter.
Something I've learned on our road to homesteading is that the healthiest foods are generally really easy to prepare, but taste so much more delicious than anything you will find pre-made in the store. This recipe is no exception:
2 cups cooked and cooled quinoa
2 chopped tomatoes (large)
4 cloves of garlic, minced
1 cup chopped cilantro
feta cheese to taste.
2 tbsp lemon juice
2 tbsp olive oil
1 tsp prepared mustard
a few pinches each of salt and pepper
1/4 cup water (cold or room temp)
1/8 cup vinegar
2 tsp sugar (or 1 tsp raw honey)
Mix all of the salad ingredients in a large bowl. Mix all of the dressing ingredients in a jar with a lid, then shake well. Add to salad. Enjoy!
