This is my favourite pasta salad recipe ~ you can change it up every time you make it! My kidlets go crazy over it, so I make BIG batches.
Quick-Change Pasta Salad
1. Cook the pasta. Chop up veggies and cheese while you're waiting.
2. Strain the pasta, then run under cold water until pasta is completely cooled - don't skip the rinse! That's what keeps the noodles from getting mushy when stored.
3. Add all that other good stuff, then add in your dressing. The amount to add depends on your taste... I usually do two good squeezes, and that about does it.
Really, you can use any kind of crunchy veggie that you like, and if you prefer, go with some quinoa instead of pasta. Sometimes, I throw in leftover chunks of ham or chicken, depending on what's in the fridge! It's a perfect recipe for no-fuss summer BBQs, and family picnics
